Gluten Free General Chang's Chicken

For 2013 HB and I have decided to team up for a 52 project. It's like the 365 photography challenge, but instead we're committing to share one recipe a week.

If you’re new here you might be surprised to find out that HB is gluten intolerant. Basically, gluten sensitivity is a spectrum of sensitivity to gluten including celiac disease and wheat allergy. If HB accidentally eats gluten he experiences a variety of reactions which won’t kill him, but they make him VERY uncomfortable and have been getting worse over time. I have no gluten sensitivity what-so-ever, but to keep things simple we keep our home gluten free. (Except those rare occasion where I have to have chocolate chip cookies RIGHT NOW.)

This week HB did all of the cooking. One night he came home from the grocery store with several bags and a mission - to make General Chang's Chicken. This recipe is one of the amazing ones from Artisanal Gluten-Free Cooking. For once we haven't modified the recipe at all which just goes to show you I can't recommend the book highly enough. 

What you'll need...

  • olive oil
  • 4 boneless, skinless chicken breasts
  • cornstarch
  • 3 minced garlic cloves
  • 1/2 c orange juice
  • 1/2 c cranberry juice
  • 2 tbs rice vinegar
  • 3 tbs GF soy sauce
  • 3 tbs packed brown sugar
  • 1 - 2 tbs ground chili paste (more or less depending on how much heat you want)
  • 2 tbs water
  • chopped scallions for garnish

What you'll do...

Sorry folks...I can't share the steps to make this delicious meal here. We followed the cook book directions to the letter and I wouldn't want to rip off Kelli and Peter Bronski's hard work by giving you one of the recipes from their book for free.
